Reviewing a Week of Eating Meatless

Well, we survived a week of eating meatless! It was actually less than a week--Monday through Saturday, with a deliberate end yesterday to enjoy 'meat-filled' snacks for the Super Bowl (sausage balls. Yum). I tried several new recipes this week that we enjoyed and hope to add to our family's 'rotation'. I did not make it through all of the recipes I wanted to try, even, as a couple of meals made leftovers that we ate more than once. All in all, it was a great experience, and Nathan and I did not find ourselves missing meat at all.

Here is our meals from last week:

Monday :  Vegetarian Quinoa Chili
Colorful and delicious, the only change to this recipe I would make would be to increase the spices for some extra 'oomph'.

Tuesday: leftovers

Wednesday:  Curried Split Peas (Dhal) w/eggs and tortillas
This is a Bangladesh meal that N enjoyed when visiting that country. The dhal was really spicy, so the next time I will decrease the heat. The kids liked the meal, especially eating the tortillas with their fingers, though they couldn't eat much of the dhal as it was too spicy.

Thursday: Black Bean and Cheese Quesadillas
I added avocado to my quesadilla--yummy!

Friday: Quinoa Black Bean Burgers
This burgers come together very similarly to my falafel recipe, but they have a different taste and texture. The burgers were very good, and tasted even more delicious with avocado on the top

I had planned a different meal for Saturday but did not put it in the crockpot on time. Instead I came across this recipe and had all of the ingredients on hand. It was a completely different type of meal that what we had eaten last week, so we welcomed it. I used a fresh tomato instead of canned, and a splash of cream to thin out the sauce. It is a delicious meal that meat could be added to if desired.

Our takeaway: we don't have to eat meat. At all. There are many wonderful meat-free meals to explore, and we just scratched the surface with the recipes we used last week. The Finn family is not becoming vegetarian, but we do hope to decrease our dependence upon meat and increase our intake of other sources of protein. If nothing else, I have found several recipes that I look forward to making again in the future! I did not make all of the recipes I intended to make, so I know we will be eating meatless meals in the future.

Note: This is one of my first attempts to have Eleanor use a utensil. Yogurt was probably not the best choice, since it falls off the spoon and is much more fun to paint with!

Eleanor's first 'meal'

Now that Eleanor is six months old, it is time to start introducing "solid" foods into her diet (solid is in quotations because the food isn't exactly solid...it's just more solid than what she's used to). So today, I got Eleanor ready:

And introduced her to avocado (a great beginner food that's high in the fats that babies need;-)

This face is not because of the food--she does this when the camera flash goes off in her face.

She likes it! See the lean forward? Eleanor would have loved to grab the spoon from me--she wanted it badly.

What the kids eat when Daddy's not home

Snack dinner! It usually involves fruit (often apples), pretzels, and cheese (right now we are on a string cheese kick). The kids love it, especially since they get to eat their snack dinner on the picnic blanket on the living room floor watching a movie or television. It's lots of fun, and super easy while Daddy is away.

Small breakthroughs

I have mentioned this in passing on the blog recently, but we have been struggling with Georgia's finicky eating over the past couple of weeks. It has been a regular matter of frustration--and prayer! Tonight, though, we had a brief, and possibly temporary, breakthrough: Georgia ate baked ziti on her own! Two weeks ago I had to sit at the table with her for an hour before she ate it (I asked her to eat two bites of ziti and two bites of applesauce; she turned her nose up at both, though applesauce is on her top 5 list normally). Tonight, it was no big deal. Praise the Lord! I realize she may change again tomorrow, but tonight felt like a triumph. In other "Georgia is growing up news", we took down her crib mobile tonight (I know, she's way too old now:-). This morning, she woke up early and decided to demolish it--she didn't break it, but she did pull off every flower, the music box and something else, I think. We decided it needed to go! Our goal is to start transitioning her to a big girl bed this summer, so the mobile is the first step. So, for all my reader friends--any advice about moving to a bed from a crib? I'd love to hear it!

Milkshakes and kid's meals

This week Georgia sampled her first milkshake (don't worry, she really didn't really have much more than a couple of licks) and her first kid's meal. Hurray for Moe's, where kids eat free on Monday nights! And may I just say, I highly recommend the new Sonic chocolate shake with Whoppers. Yummy.


Notice Georgia proudly sporting her UGA gear! Even if you don't like UGA, you can't resist the adorable little girl in her cute outfit:-) P.S. Georgia recommends the kid's cheese quesadilla at Moe's. She ate almost every bite!

Georgia at Ten Months

It seems like just yesterday that I was writing the post titled "Georgia at Nine Months"...actually, it was only two weeks ago, because I waited until her 9 month check up to post:-) Every time I do a monthly rundown, I talk about how fast she is growing and how quickly time flies, so I will not go over that again.


Let's talk about what Georgia is doing:
1). She is crawling everywhere, and as fast as she can! Georgia can quickly exhaust me by her movement through the apartment.
2). She is talking--a LOT!!!--though not often using words we can understand. She does say Mama and Dada and "Uh-Oh" very clearly, but seldom on command. We have noticed her associating MAMA with me and DADA with Nathan more oftne. One morning a few days ago, she reached her hands towards me, giggled and said "Ooh, Mommy!" That was fun. The "Uh-Oh" game is one of her favorites: she drops an item on the floor and says "Uh-Oh" and waits for Mommy or Daddy to pick it up.
3). She climbs the stairs at record speed, and once or twice has thought about trying to go down them.
4). She pulls up on anything and everything--the side of the bathtub, the couch, the laundry basket, her daddy! For just a few seconds tonight she was standing upright without holding onto anything. I don't think she even realized she did it.
5). She can hold her sippy cup and tilt it up to drink now. She had been able to hold it for a while, but not tilt it up to get her drink, which would just frustrate her. Georgia frequently reaches for the spoon when I try to feed her, so the attempts at self feeding are not far away!

In other news, this is the first full week of classes for Nathan. Today was SEBTS' first chapel service and convocation(listen to Dr. Akin's sermon here.). Nathan marched with faculty for the first time ever! I took pictures of the processional, but they didn't turn out too well. Instead, a picture of Nathan hobnobbing with other faculty while waiting for the march over to the chapel will have to suffice. Have I mentioned how excited we are that Nathan is on faculty here at SEBTS? We are truly blessed!


Back to Georgia---Here are some fun pictures!


I was feeding her green beans, and they ended up all over her face and in her hair! She still doesn't like them too much!

G wants to stand and pull up on everything. Tonight she was tickled beyond belief at being able to pull up on the tub and watch as we filled her baby bathtub with water. Now if I could just keep her from trying to stand while she is IN the bathtub....

Who knew toothbrushing could be so much fun? Georgia loves her toothbrush; I brush her teeth with it and then let her chew on it some.
