Taco Cupcakes

Who doesn't love a good taco? (seriously, if you don't, please don't tell me--it will crush my dreams and the cute intro to this post)

Imagine all of the taco-ey goodness baked into a biscuit ("cupcake") shell, and these are the things dreams are made of. Naturally, tacos are best with crunchy or soft shells, but this twist on a taco is a lot of fun and just might replace crunchy shells on your family's menu! It is super easy, and something that kids can help to make as well.


Taco Cupcakes

Ingredients:
1 lb. ground beef
1 packet taco seasoning, or 2-3 TBS of homemade taco seasoning
shredded cheese (we like a Mexican blend, but you can use whatever you like)
1 can Grands Flaky Layers biscuits (8 count)

Directions:
Brown ground beef in pan until no longer pink. Drain grease and pat dry. Return to pan, add taco seasoning packet and water according to packet instructions. If using your own taco seasoning, add 1/2-3/4 water and 2 or 3 TBS seasoning. Allow meat mixture to come to a simmer and combine thoroughly. Yes, so basically prepare the meat like you would be making tacos :-)

Lightly spray a muffin tin/cupcake pan with cooking spray. Separate biscuits into eight biscuits, and then gently pull apart each biscuit into two layers, giving you 16 'half biscuits'. Gently roll out the biscuit using a rolling pin or your fingers until it is big enough to fit in the cupcake pan (like a cupcake liner made out of biscuit). If you want to be neat and precise, use a rolling pin; I just stretch it out a little with my fingers and then press it into the cupcake pan. Put a couple of spoonfuls of meat into the biscuit shell and sprinkle the top with cheese.  Bake according to the instructions on the biscuit can, or until biscuits are golden on top. Once slightly cool, pop them out of the muffin pan and enjoy!

One batch make 16 'cupcakes', and feeds my family of five with a couple leftover.

I do this (more or less) with a meat mixture of half ground turkey breast and half italian sausage. Brown and drain. Mix meat with pizza sauce. (Toss in some chopped pepperoni and/or other pizza toppings, if you want.) Fill cups with meat mixture, top with pizza cheese blend. Pizza Cups!
